Serve And Eat A New Style 'Falooda' In Your Cool Home

Falooda or Faluda, India’s rival to the western sundae, is undoubtedly one of those desserts that leaves you with an aftertaste you won’t soon forget. It’s sweet, creamy, cooling and colourful too. What’s more, it’s one of the only desserts that can be served in a glass as well as a bowl. This quirky dessert has captured the hearts and taste buds of Indians all over the nation, and the world. And now, you can make it from the comfort of your home!

Ingredients (serves 2 people)
  1. Milk – 1½ cups
  2. Sugar – 2 tbsp
  3. Basil seeds – 2 tsp
  4. Ice cream – 2 scoops
  5. Falooda sev – handful
  6. Rose syrup – 2 tbsp
  7. Pistachios – few, chopped for garnishing
  8. Rose petals – few, for garnishing
Directions
  • To make your home-made Falooda, start by soaking the basil seeds in water for 30 minutes. Drain once done. 
  • Pour some sugar into a pan with a cup and a half of milk in it. On medium heat, let it come to a boil after which you can lower the heat and allow it to simmer for approx. 5-7 minutes. 
  • Once it has simmered, you have to then chill it in the refrigerator until you see the milk turn slightly thick.
  • Now, you have to pour some water in a pan and allow it to come to a rolling boil. Once it has started boiling, add in the Falooda sev; give it 4-5 minutes to cook. 
  • Next step, drain the water and immediately rinse the Falooda sev with cold water so that cooking is halted. Now you have to summon your craft making skills. Take a pair of kitchen scissors and use them to cut them into approx. 1 inch pieces.
  • Your soaked basil seeds, chilled milk and sev are ready, it’s time to put together your Falooda.
  • To assemble the Falooda, take two glasses and add the basil seeds to it first.
  • Then top it off with the cooked Falooda sev.
  • To this, you must add a tablespoon of rose syrup in each glass.
  • You’re almost there! Now, pour the milk in it and watch as some of the basil seeds float to the top.
  • To this add a scoop of ice cream. 
  • It’s done. Just garnish it with chopped pistachios and rose petals and serve.
